Rosemary Chicken
Here are some simple chicken recipes,even for the novice cook.
Preparation Time 5 minutes
Cooking Time 45 minutes
Serves 4 people
Ingredients
1- 3 lb. chicken (cut up).
Salt and black pepper
1 Tbls. vegetable oil
1 tbls. butter
4 garlic cloves
1/2 tps. dried rosemary
1/4 cup dry white wine
1/4 cup chicken broth
1. Season chicken with salt and pepper. In a large frying pan, heat oil and butter over a medium heat. Add the cloves of garlic and cook only about 2 minutes, without browning garlic. Put in the chicken and cook, turning frequently until browned, Approximately 10 minutes.
2. Sprinkle with rosemary; add the wine and chicken broth. Cover and cook over low heat. Turn only once. Continue to cook for 30 minutes ,until tender.
3. Remove chicken from pan and put on a warm platter. Throw away garlic cloves and pour any remaining juice over chicken.
Chicken Stroganoff Casserole
This dish which I make often is a lighter version of the traditional beef dish, but just as tasty. The chicken breasts can be sliced into 1/2 inch strips and served over noodles for a more classic stroganoff dish.
Preparation Time 10 minutes
Cooking Time 45 minutes
Serves 4 people
Ingredients
3 tbls. margarine or butter
4 skinless, boneless chicken breasts halves
4 tbls. flour
2 cups sour cream
1 cup sliced mushrooms
Fresh ground pepper
2 tbls. choppes parsley
4 scallions (chopped)
Grated rind of 1 lemon
3 tps. lemon juice
1. Begin by preheating your oven to 350 degrees F. Melt the butter or magarine in a large frying pan and brown chicken breasts for about 4 minutes. Remove the breasts and place into a 8 x 8 x 2-inch oven-proof baking dish.
The Sauce
2. Stir the flour into the pan and cook for about 1 minute. Next add the sour cream and pepper. Let this all simmer for about 5 minutes. Add the mushrooms, parsley, and scallions. Stir in lemon rind and lemon juice.
3. Pour the sauce over the chicken, cover dish with foil, and bake for 45 minutes. Bon Appetit!!!
Baked Honey-Mustard Chicken
Yum Yum...doesn't this recipe just sound scrumptious? Well trust me it really is.You r eally want to give it a go.
Ingredients
1 chicken (about 3 lbs.), cut up
1/2 cup (1 stick) butter or magarine
1/2 cup honey
1/4 cup Dijon mustard
1/2 tsp. ground pepper
1. Preheat oven, of course,to 350 degrees F. Place the chicken into a 13x9x2-inch baking dish or pan.
2. Mix together the butter, honey, mustard, salt, and pepper. Spread entirely over the chicken, and bake for 1 hour. Baste the chicken with the juice about every 15 minutes. At the end of baking, the chicken will be tender and golden brown. Serve with you favorite sides.
